Cream Of Carrot Soup (Vegan)


2 garlic cloves

4 potatoes (peeled and chopped)

1 bag of organic baby carrots or 4-5 regular sized organic carrots (peeled and chopped)

1 small turnip (peeled and chopped)

1-2 leeks (chopped)

Sea salt to taste

2 tbsp of extra virgin olive oil

4-8 cups of water (depending on desired consistency. I recommend start with four then add more after purreing)

1 cup organic orzo pasta


In a pot, over medium heat, add extra virgin olive oil and garlic. Let it heat and sweat. Then add water, potatoes, carrots, turnip, leeks, salt and bring to a boil. Let boil until potatoes and carrots are soft.

With a hand blender, puree all ingredients. Add water if necessary to reach desired consistency. Then add pasta and let boil again until pasta is fully cooked.

Add additional vegetabkes if desired, such as spinach or peas. Dress with green onions if you wish or simply enjoy as is!
